1/2 cup dry white wine or no alcohol white wine

1/4 cup sugar

Juice of one lemon

Lemon peel of one lemon

1/4 cup Buttermilk (optional)

4 buds of fresh, chopped garlic

2 whole onions, chopped

1 Teaspoon ground cumin

1 Teaspoon fennel seeds

1/2 Teaspoon salt

½ Teaspoon pepper

2 Cups chicken stock or enough to cover ingredients

Soak the turtle beans in cold water overnight. Rinse well and discard any sand and stones. Drain, dry and put aside. Sauté garlic and onions until soft. Put all the ingredients into a large stockpot. Top with chicken stock with at least one inch above all the ingredients. Heat to a boil and reduce to simmer until beans turn very soft and mushy. Stir occasionally to prevent burning the bottom. Add as necessary to keep ingredients covered. Once beans are soft, let the mixture cool and puree in a blender or food processor. Bring back to a boil for serving using a dollop of salsa and plain yogurt as garnish.
